St. Patricks Day Cookies

These little green cookies are not only festive but so sweet and delicious! I had so much fun planning on what kind of dessert I would put together for you all and I saw these adorable little cookies on Pinterest and wanted to put my own spin on it! The best part about these cookies is that they are totally interchangeable for whatever time of year it is! Color the dough whatever color you’d wish for whatever time of year. You can also substitute the white chocolate chips for milk chocolate, semi-sweet or dark chocolate. As always make these recipes your own. Be creative and ALWAYS have fun 🙂

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup softened unsalted butter
  • 3/4 cup white granulated sugar
  • 3/4 cup packed brown sugar
  • 2 tsp. vanilla extract
  • 2 eggs
  • 2 cups white chocolate chips

Instructions:

  1. Wash your hands and preheat the oven to 350° F.
  2. In a medium sized bowl whisk together the flour, baking soda and salt. Then set aside.
  3. In a separate bowl whisk together both sugars and the butter until the mixture is nice and smooth. Slowly add in one egg at a time. Then add in the vanilla extract.
  4. Slowly mix in the dry ingredients and continue to mix until your dough comes together nicely.
  5. Fold in the white chocolate chips using a silicone spatula. Be careful not to over mix the dough.
  6. Scoop your dough into about 2 Tbsp. sized balls and bake 2″ apart for 8-10 minutes or until slightly golden brown on the bottom.
