- 2 cups spinach, loosely packed
- 1/2 cup pea shoots
- 3 hearts of palm
- 1 red apple
- 1 yellow apple
- 1/2 cup oil
- 1/3 cup white vinegar
- 2 Tablespoons honey
- 1 garlic clove
- 1/4 tsp. salt
- 1/4 tsp. pepper
- Wash and dry the spinach leaves.
- Cut the hearts of palm into 1/2 inch slices.
- Slice the apples into thin slices
- In a salad bowl or a tray, add a layer of spinach.
- Top with pea shoots.
- Add the sliced apples on top of the greens.
- Top with the hearts of palm.
- In a mason jar, add all the ingredients for the vinaigrette.
- Shake well until fully incorporated.
