Healthy Gluten Free Banana Bread

This recipe is so delicious, super easy and such a healthy alternative to the traditional banana bread. In this recipe we will be using honey instead of sugar but if you prefer to use sugar then simply replace it using the same amount that the recipe calls for. The same goes for flour. If you prefer to not make this gluten free then simply replace the flour for any all-purpose flour. I hope you all enjoy it and as always please share all of your creations with us on social and in the Baketivity Community group page on Facebook! :) Ingredients:
  • 4-5 ripe bananas mashed
  • 1/2 cup honey
  • 1/2 cup butter (melted)
  • 2 eggs
  • 1 Tbsp. milk
  • 1 tsp. vanilla
  • 2 cups gluten free flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
Instructions:
  1. Preheat the oven to 350° F and grease a loaf pan (you can also make turn these into muffins) with a non stick spray.
  2. In a medium sized bowl whisk together the flour, baking powder, baking soda, cinnamon and salt then set aside.
  3. In a separate bowl mash the bananas using a fork or a potato masher until they are all broken down.
  4. Add in the honey and butter then whisk until everything is nicely combined.
  5. Add in the eggs one at a time stirring in between each addition. Then add vanilla.
  6. Slowly pour the dry ingredients into the banana mixture and stir everything together until it is just combined.
  7. Pour the batter in the loaf pan then use a spoon to spread the top down evenly.
  8. Bake for 35-40 minutes or until a toothpick inserted comes out clean.
  9. Let the banana bread cool down before cutting a slice (I know it's so hard but be patient!).
  10. That's it! Enjoy!
Enjoy with:
  • Melted butter
  • Cream cheese
  • nutella
  • peanut butter
  • toasted with a drizzle of maple syrup
  • fresh fruit
