The holiday celebrates the Jewish New Year, and traditionally, honey is incorporated into recipes to kick off a sweet new year! These delicious Honey Muffins are moist and fluffy, and are a perfect addition to your Fall dessert menu as well. Enjoy!   Ingredients: 3/4 cups oil 2 tsp. vanilla sugar 1 1/2 cups sugar 8 eggs 4 cups flour 1 tsp. baking powder 1 tsp. baking soda 2 tsp. coffee, dissolved in 1/4 cup boiling water 1 cup honey 3/4 cup orange juice   Directions: 1. Preheat the oven to 350° F and grease a muffin pan with non stick spray then set aside. 2. In a large bowl, whisk together the oil, vanilla sugar, sugar and 8 eggs until well combined. 3. Add in the remaining ingredients and whisk until the mixture is nice and smooth and there are no lumps. This should take 1-2 minutes of mixing. 4. Fill the muffin pans about 3/4 of the way full. 5. Bake for 20-25 minutes or until a toothpick inserted comes out clean. 6. Let the muffins cool on a cooling rack before enjoying. Serve and enjoy!
