St. Patrick's Day Cupcakes For Kids

An easy and delicious St. Patrick's Day treat! The perfect St. Patrick's Day Treat! Get ready to celebrate St. Patrick's Day with these delicious Over The Rainbow Cupcakes that are perfect for kids and adults alike! With our easy step by step instructions and a few festive decorations, you can make these cupcakes the perfect addition to any St. Patrick's Day celebration. So what are you waiting for? Grab your apron, get your ingredients ready, and let's get baking! Time: 1 hour 30 minutes Yield: 12-15 cupcakes Ingredients:
  • Your favorite boxed cake mix
  • 1 cup unsalted butter, room temp.
  • 2 ½ cups confectioners sugar
  • 3-5 Tbsp. heavy whipping cream
  • 1 tsp. Vanilla
  • Dash of salt
  • 2-3 drops of green food gel
  • Rainbow candy strips
  • Gold sugar sprinkles (optional)
Directions:
  1. Prepare and bake your cupcakes according to the directions printed on the box. You can make these cupcakes EXTRA festive by placing a few drops of green dye into the batter if you’re using vanilla.
  2. Let the cupcakes cool completely on a wire rack before decorating.
  3. While the cupcakes cool, we can prepare the buttercream.
  4. In a large mixing bowl, whisk together the butter and confectioner’s sugar while slowly adding in the heavy whipping cream.
  5. Continue to whisk until the buttercream becomes light and smooth. Add in the vanilla and salt. Then whisk to combine.
  6. Remove about ¾ cups of the buttercream to dye green. This will be the base of our cupcake.
  7. Place the remaining white buttercream into a piping bag.
  8. Once the cupcakes are cooled, use an offset spatula or butterknife to spread the green buttercream evenly over each cupcake.
  9. Then, cut about ¼” off of the piping bag filled with white buttercream and pipe small circles on 2 sides of the cupcake to make the clouds.
  10. Depending on the size of your rainbow candy strips, you may need to cut them in half.
  11. Next, place one end of the candy rainbow into one side of the clouds then arc it over the cupcake and place the other end into the opposite side of the clouds.
  12. You should be left with a rainbow over your cupcake with clouds on either side! Use the video as reference when needed.
  13. Sprinkle a bit of gold sugar sprinkles on one side of the clouds for the pot of gold!
  14. Repeat these steps for each cupcake and enjoy!
